Method

Preparation

  1. 1

    Prepare the Shrimp

In a large mixing bowl, combine the peeled and deveined shrimp with olive oil, paprika, salt, and black pepper. Toss to coat the shrimp evenly with the seasoning. Set aside to marinate for about 10 minutes.

  2. 2

    Chop the Vegetables

While the shrimp is marinating, dice the bell pepper and slice the green onions. Mince the garlic and set all vegetables aside.

Cooking

  1. 3

    Sautéing the Shrimp

Heat a large skillet over medium-high heat and add the marinated shrimp. Cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

  2. 4

    Cooking the Vegetables

In the same skillet, add a little more olive oil if needed, and toss in the minced garlic, diced bell pepper, and sliced green onions. Sauté for about 3-4 minutes until the vegetables are tender.

  3. 5

    Combine with Pimento Cheese

Reduce the heat to medium and return the shrimp to the skillet. Add the pimento cheese and lemon juice, stirring gently to combine all ingredients until the cheese is melted and creamy. Cook for an additional 2-3 minutes.

  4. 6

    Serve

Remove from heat and serve immediately, garnished with additional green onions if desired. Enjoy your Shrimp Pimento!
