Method

Taco Filling Preparation

  1. 1

    Prepare the Shrimp

In a bowl, combine the shrimp and lime juice. Ensure the shrimp is completely submerged in the lime juice. Cover and refrigerate for about 30 minutes until the shrimp turns opaque and is 'cooked' in the acidity.

  2. 2

    Chop Vegetables

While the shrimp is marinating, finely chop the red onion, cucumber, and cilantro. Combine them in a separate bowl and season with salt and black pepper. Set aside.

Grilled Pineapple Salsa Preparation

  1. 3

    Grill the Pineapple

Preheat a grill or grill pan over medium heat. Cut the pineapple into rings or wedges and grill for about 3-4 minutes on each side until caramelized and grill marks appear. Remove from heat and let cool, then chop into small pieces.

  2. 4

    Combine Salsa Ingredients

In a bowl, mix the grilled pineapple, finely chopped red onion, cilantro, jalapeño, lime juice, and salt to taste. Stir well and set aside to allow the flavors to meld.

Taco Assembly

  1. 5

    Warm the Tortillas

In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

  2. 6

    Assemble the Tacos

On each tortilla, layer a portion of the shrimp mixture, followed by the cucumber and red onion mix. Top with a spoonful of the grilled pineapple salsa and slices of avocado.

  3. 7

    Serve

Serve the tacos with lime wedges on the side for squeezing over the top. Enjoy your delicious shrimp ceviche tacos!
