Preparation

  1. 1

    Prepare the Shrimp

In a medium bowl, combine the fresh shrimp with lime juice. Ensure the shrimp are fully submerged in the lime juice, as this will 'cook' them. Cover the bowl and refrigerate for about 30 minutes until the shrimp turns opaque.

  2. 2

    Chop Vegetables

While the shrimp is marinating, finely chop the red onion, jalapeño, and cilantro. Set aside.

  3. 3

    Dice Fruits

Dice the mango and avocado into small pieces and set aside.

Mixing

  1. 4

    Combine Ingredients

Once the shrimp has turned opaque, remove it from the refrigerator. Drain any excess lime juice and add the chopped red onion, jalapeño, cilantro, diced mango, and diced avocado to the shrimp.

  2. 5

    Season the Mixture

Add salt and black pepper to taste. Gently mix all the ingredients together so as not to mash the avocado.

Serving

  1. 6

    Serve

Spoon the ceviche into serving bowls and garnish with additional cilantro if desired. Serve chilled with tortilla chips or on its own.
