Method

Preparing the Base

  1. 1

    Step 1: Create Anise Infusion

In a medium saucepan, combine 1 cup of anise and 2 cups of water. Bring to a simmer over medium heat, stirring occasionally. Let it simmer for about 10 minutes to extract the flavor.

  2. 2

    Step 2: Strain the Mixture

After simmering, strain the mixture through a fine mesh sieve or cheesecloth to remove the solids. You will have a flavorful anise infusion.

  3. 3

    Step 3: Dissolve Sugar

Return the strained anise infusion to the saucepan. Add 2 cups of sugar to the liquid. Heat gently, stirring until the sugar is completely dissolved. Do not let it boil.

  4. 4

    Step 4: Add Alcohol

Once the sugar has dissolved, remove the saucepan from the heat and let it cool slightly. Add 3 cups of neutral grain spirit or vodka to the mixture and stir well.

Flavoring the Sambuca

  1. 5

    Step 5: Add Flavoring Ingredients

To the mixture, add 3 pieces of star anise, 1 teaspoon of fennel seeds, and 1 teaspoon of vanilla extract. Stir to combine.

  2. 6

    Step 6: Infuse the Mixture

Cover the saucepan and let the mixture sit at room temperature for 24 hours to allow the flavors to meld together.

  3. 7

    Step 7: Filter the Sambuca

After 24 hours, strain the mixture again through a fine mesh sieve or cheesecloth to remove the flavoring solids. The sambuca will now be a clear liquid.

  4. 8

    Step 8: Bottle and Store

Pour the filtered sambuca into clean, sterilized bottles. Seal the bottles tightly and store in a cool, dark place. It can be enjoyed straight, on the rocks, or in cocktails.
