Prepare the Salmon
If using leftover cooked salmon, flake it into small pieces. If using raw salmon, cook it first by poaching, grilling, or baking until fully cooked.

Mix the Ingredients
In a medium bowl, combine the cooked salmon, cream cheese, lemon juice, dill, capers, salt, and black pepper. Mix until well combined and smooth. You can use a fork or a food processor for a finer texture.

Taste and Adjust
Taste the mixture and adjust seasoning if necessary, adding more salt, pepper, or lemon juice to suit your preference.

Prepare the Lettuce
Wash and dry the romaine lettuce leaves. They will be used as a base for serving the pâté.

Assemble the Dish
On a serving platter, lay out the romaine lettuce leaves. Spoon the salmon pâté evenly onto the leaves. Top each with a piece of white anchovy and sprinkle with sourdough croutons around the edges for added crunch.
