Prepare the Base

    Rinse the sushi rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and water. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Prepare the Salmon

    Marinate the Salmon

    Cut the fresh salmon fillet into bite-sized cubes. In a bowl, combine the soy sauce, sesame oil, and chopped green onions. Add the salmon cubes to the marinade and let it sit for at least 15 minutes.

    While the salmon is marinating, thinly slice the cucumber, avocado, carrot, and radishes into bite-sized pieces. Set aside.

Assemble the Poke Bowl
