Preparation

  1. 1

    Season the Fish

Pat the fluke fillets dry with a paper towel. Season both sides of the fillets with salt and black pepper.

  2. 2

    Prepare Garnish

Chop the fresh parsley finely and set aside. Cut lemon into wedges for serving.

Cooking

  1. 3

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until shimmering.

  2. 4

    Sear the Fish

Gently place the seasoned fluke fillets in the hot oil, skin-side down if applicable. Sear for about 3-4 minutes until the bottom is golden brown.

  3. 5

    Add Butter

Carefully flip the fillets and add the butter to the pan. Allow the butter to melt and baste the fillets for an additional 3-4 minutes until cooked through.

  4. 6

    Check for Doneness

The fluke is done when it flakes easily with a fork and is opaque in the center.

Serving

  1. 7

    Plate the Dish

Transfer the cooked fluke fillets to serving plates. Garnish with chopped parsley and serve with lemon wedges on the side.
