Method

Filling

  1. 1

    Prepare the Pears

Peel, core, and slice the Williams pears into small pieces.

  2. 2

    Cook the Filling

In a saucepan, combine the sliced pears, Cognac, sugar, lemon juice, and cinnamon stick. Cook over medium heat for about 10-15 minutes, stirring occasionally, until the pears are tender and the mixture thickens slightly.

  3. 3

    Cool the Filling

Remove from heat and let the filling cool completely, then discard the cinnamon stick.

Pastry

  1. 4

    Prepare the Dough

In a bowl, mix the flour, powdered sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.

  2. 5

    Combine Ingredients

Add the egg yolks and vanilla extract to the mixture, stirring until the dough comes together. If needed, add a little cold water.

  3. 6

    Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

  4. 7

    Roll Out the Dough

On a floured surface, roll out the chilled dough to about 0.5 cm thick. Cut into circles or desired shapes to form the pastry base and tops.

  5. 8

    Assemble the Pastry

Place the pastry bases in a greased tart or pie dish, fill with the prepared pear filling, and top with pastry shapes. Seal the edges by pressing them together.

  6. 9

    Bake the Pastry

Preheat the oven to 180°C (350°F) and bake the assembled pastries for 25-30 minutes or until golden brown.

To Serve

  1. 10

    Prepare Whipped Cream

Whip the cream until soft peaks form. You can add a bit of sugar for sweetness if desired.

  2. 11

    Serve the Pastry

Allow the pastries to cool slightly before serving. Plate the pastries, dollop with whipped cream, and garnish with chocolate shavings.
