Method

Preparation

  1. 1

    Prepare the Ingredients

Begin by peeling and chopping the garlic cloves, red bell peppers, onion, potatoes, and carrots into bite-sized pieces. Set aside.

  2. 2

    Marinate the Pork

In a large bowl, combine the pork shoulder with paprika, salt, black pepper, oregano, and red chili flakes. Mix well and let it marinate for at least 30 minutes.

Cooking

  1. 3

    Sear the Pork

In a large pot, heat the olive oil over medium heat. Once hot, add the marinated pork shoulder and sear on all sides until browned, about 5-7 minutes.

  2. 4

    Add Aromatics

Add the chopped garlic, onion, and red bell pepper to the pot. Sauté for an additional 3-4 minutes until the vegetables soften.

  3. 5

    Build the Stew

Stir in the tomato paste, then add the potatoes, carrots, bay leaves, and enough water to cover the ingredients. Bring to a boil, then reduce heat to low and let it simmer for about 1.5 hours.

  4. 6

    Finish with Peas

In the last 10 minutes of cooking, stir in the green peas. Adjust seasoning with more salt and pepper to taste.

Serving

  1. 7

    Serve the Dish

Remove the bay leaves and serve the Montenegro stew hot, garnished with fresh parsley if desired.
