Method

Cooking the Pasta

    Boil Water

    In a large pot, bring water to a rolling boil. Add a pinch of salt to the water.

    Cook Macaroni

    Add the elbow macaroni to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain and Set Aside

    Once cooked, drain the macaroni in a colander and set aside.

Making the Cheese Sauce

    Melt Butter

    In the same pot used for the pasta, melt 4 tablespoons of unsalted butter over medium heat.

    Make Roux

    Add 1 tablespoon of all-purpose flour to the melted butter, whisking continuously for about 1-2 minutes to create a roux.

    Add Milk

    Gradually pour in 2 cups of milk while whisking to prevent lumps. Cook until the mixture thickens, about 5 minutes.

    Add Cheese

    Remove the pot from heat, then stir in 2 cups of shredded cheddar cheese until melted and smooth.

    Season

    Add 1 teaspoon of salt, black pepper to taste, and paprika to taste. Stir to combine.

Combining and Serving

    Combine Pasta and Sauce

    Add the drained macaroni to the cheese sauce, stirring until the pasta is fully coated.

    Prepare Topping (optional)

    If using, mix breadcrumbs and grated Parmesan cheese in a small bowl.

    Serve

    Spoon the mac and cheese into bowls or a serving dish. If using the breadcrumb topping, sprinkle it on top and serve immediately.
