Fermentation Process

Add 200 grams of sugar to the crushed grape mixture. Sprinkle 10 grams of yeast evenly over the top and gently mix to combine.

Cover the fermentation vessel with a clean cloth and allow the mixture to ferment for 7-10 days, stirring daily to ensure even fermentation.

After primary fermentation, add 5 grams of malolactic bacteria to the mixture. Allow it to ferment for another 2-3 weeks to soften the acidity.

Once fermentation is complete, use the wine press to extract the liquid from the grape skins. Collect the juice in a clean container.
