Method

Preparing the Grapes

  1. 1

    Harvesting Grapes

Harvest 1000 grams of Pinot Noir grapes and 1000 grams of Chardonnay grapes at optimal ripeness. Ensure that they are free from rot and disease.

  2. 2

    Crushing Grapes

Place the harvested grapes into the fermentation vessel. Crush the grapes gently to release the juice but avoid breaking the seeds.

Fermentation Process

  1. 3

    Adding Sugar and Yeast

Add 200 grams of sugar to the crushed grape mixture. Sprinkle 10 grams of yeast evenly over the top and gently mix to combine.

  2. 4

    Primary Fermentation

Cover the fermentation vessel with a clean cloth and allow the mixture to ferment for 7-10 days, stirring daily to ensure even fermentation.

  3. 5

    Malolactic Fermentation

After primary fermentation, add 5 grams of malolactic bacteria to the mixture. Allow it to ferment for another 2-3 weeks to soften the acidity.

Pressing and Bottling

  1. 6

    Pressing the Wine

Once fermentation is complete, use the wine press to extract the liquid from the grape skins. Collect the juice in a clean container.

  2. 7

    Stabilization

Add 50 grams of sulfur dioxide to the pressed wine to stabilize it and prevent unwanted bacterial growth.

  3. 8

    Bottling the Wine

Use a siphon to transfer the stabilized wine into clean bottles, leaving some space at the top. Seal the bottles tightly.
