    Begin by cutting the pork shoulder into large chunks. Peel and chop the onions, carrots, and garlic cloves.

Browning the Meat

    In a large heavy-bottomed pot, heat the olive oil over medium-high heat. Add the pork chunks in batches, browning them on all sides. Remove the pork and set aside.
