    Rinse the chicken thighs under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Dice the onion, bell pepper, and tomatoes. Mince the garlic cloves.

    In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken thighs and cook for about 5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.
