    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Rinse the whole chicken under cold water and pat dry with paper towels.

    In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Rub this mixture all over the chicken, including under the skin and inside the cavity.

    Cut the lemon in half and place it inside the cavity of the chicken.

    Peel and chop the carrots and potatoes into large chunks. Cut the onion into wedges.
