    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to resemble fries. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and place on paper towels to drain excess grease. Once cool, crumble the bacon into small pieces.

Frying

    Heat the Oil

    In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to monitor the temperature.

    Fry the Potatoes

    Remove the soaked potatoes from the water and pat them dry thoroughly with paper towels. Carefully add a handful of fries to the hot oil, being cautious not to overcrowd the pot. Fry for about 5-7 minutes, or until the fries are golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to absorb excess oil. While still hot, sprinkle the fries with the house salt and the crumbled bacon.
