Prepare Tartar Sauce

Make Tartar Sauce
In a bowl, combine mayonnaise, chopped dill pickles, capers, lemon juice, and chopped parsley. Mix well and season with salt and black pepper. Refrigerate the tartar sauce for at least 30 minutes to allow flavors to meld.
Prepare Oysters

Clean Oysters
Rinse the fresh oysters under cold running water to remove any sand or debris. Drain and set aside.

Heat Oil
In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry Oysters
Carefully place the breaded oysters in the hot oil, making sure not to overcrowd the pan. Fry them for about 2-3 minutes on each side or until golden brown and crispy.

Drain Oysters
Once cooked, use a slotted spoon to remove the oysters from the oil and place them on a paper towel-lined plate to drain excess oil.
Serve

Serve with Lemon
Cut the lemons into wedges and serve alongside the fried oysters and tartar sauce.
