Fish Preparation

    Prepare the Batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer, whisking until smooth and free of lumps. Let the batter rest for about 15 minutes.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Batter the Cod

    Pat the cod fillets dry with paper towels. Dip each fillet into the batter, ensuring it is fully coated.

    Fry the Cod

    Carefully lower the battered cod fillets into the hot oil, frying them in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown, turning halfway through. Remove and drain on paper towels.

    Cut the Potatoes

    Peel the russet potatoes and cut them into thick strips (about 1/4 inch thick).

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    In a bowl, combine the mayonnaise, finely chopped dill pickles, lemon juice, and chopped capers. Mix well and season with salt and black pepper to taste.

    Cover the tartar sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
