Preparing the Fish

Make the Batter
In a bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water, mixing until you have a smooth batter.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Fish
Dip each fish fillet into the batter, allowing any excess to drip off. Carefully place the battered fillets in the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Sandwich

Prepare the Buns
Lightly toast the burger buns on a skillet or in a toaster until golden.

Layer the Ingredients
Spread a generous amount of chili-yuzu aïoli on the bottom half of each toasted bun. Layer on the bibb lettuce leaves, followed by the crispy fried fish fillet, dill pickles, and thinly sliced red onion.

Top each sandwich with the other half of the bun. Serve immediately with extra aïoli on the side if desired.
