Preparation

  1. 1

    Clean the Clams

Rinse the fresh clams under cold water to remove any sand or debris. In a pot, add the clams and cover with water. Bring to a boil, then cover and steam for 5-7 minutes until clams open. Discard any unopened clams.

  2. 2

    Chop Vegetables

Dice the potatoes, onion, and celery. Mince the garlic.

Cooking

  1. 3

    Sauté the Aromatics

In a large pot, melt the butter over medium heat. Add the diced onion, celery, and minced garlic. Sauté for 5 minutes until the onion is translucent.

  2. 4

    Add Potatoes and Broth

Add the diced potatoes, chicken broth, thyme, bay leaf, and salt to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.

  3. 5

    Incorporate Clams and Cream

Remove the bay leaf. Stir in the cooked clams and heavy cream. Allow to heat through for about 5 minutes.

  4. 6

    Season to Taste

Add black pepper to taste. Adjust seasoning if necessary.

Serving

  1. 7

    Garnish and Serve

Ladle the clam chowder into bowls, garnish with fresh parsley, and serve with crackers on the side.
