Chocolate Mousse

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Prepare Egg Mixture
In a separate bowl, whisk together the egg yolks and granulated sugar until pale and fluffy. Slowly add the melted chocolate mixture to the egg mixture, stirring constantly until well combined.

Whip Cream
In a large mixing bowl, whip the heavy cream with vanilla extract and a pinch of salt until soft peaks form. Be careful not to over-whip.

Fold Mixtures Together
Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the whipped cream.

Chill
Divide the mousse mixture into serving dishes or glasses. Cover and refrigerate for at least 4 hours, or until set.
Whipped Cream Topping

Prepare Whipped Cream
Just before serving, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

Serve
Remove the chocolate mousse from the refrigerator and top each serving with a dollop of the prepared whipped cream. Optionally, garnish with chocolate shavings or berries.
