Base

Method

Base

  1. 1

    Prepare the Oven

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine 2 cups of all-purpose flour, 1 cup of granulated sugar, 2 tsp of baking powder, and 1 tsp of salt. Whisk together until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, whisk together 1 cup of milk, 1 tbsp of vegetable oil, 2 large eggs, and 1 tsp of vanilla extract until smooth.

  4. 4

    Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Avoid overmixing.

  5. 5

    Bake the Base

Pour the batter into the prepared baking pan and spread evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Filling

  1. 6

    Prepare the Filling

While the base is baking, in a mixing bowl, blend together 8 oz of cream cheese, 1 cup of powdered sugar, 2 tbsp of lemon juice, and 1 tsp of vanilla extract until smooth and creamy.

  2. 7

    Chill the Filling

Cover the filling and place it in the refrigerator to chill until the base is completely cooled.

Topping

  1. 8

    Prepare the Topping

Once the base has cooled, spread the chilled cream cheese filling evenly over the top.

  2. 9

    Add Blueberries

Sprinkle 1 cup of fresh blueberries over the cream cheese filling.

  3. 10

    Finish with Sugar

Dust 2 tbsp of powdered sugar over the blueberries for a sweet finish.
