Marinate the Chicken
In a large bowl, mix together the olive oil, minced garlic, chopped thyme, lemon juice, salt, and black pepper. Add the chicken thighs and coat them well with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Vegetables
While the chicken is marinating, prepare the vegetables. In a large bowl, combine sliced carrots, chopped zucchini, and chopped red bell pepper. Toss them with a little olive oil, salt, and pepper to taste.

Arrange Chicken and Vegetables
In a large baking dish, arrange the marinated chicken thighs skin-side up. Scatter the prepared vegetables around the chicken.

Bake in the preheated oven for about 40-45 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
