    In a large bowl, combine olive oil, red wine vinegar, minced garlic, dried oregano, salt, black pepper, and crushed red pepper flakes. Mix well with a whisk until all ingredients are fully incorporated.

    Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap or transfer to a zip-top bag. Allow the chicken to marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.

Cooking the Dish

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Roast the Vegetables

    On a large baking sheet, spread the sliced bell peppers, zucchini, and red onion. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly. Roast in the preheated oven for 15 minutes.
