    In a large bowl, combine olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Add the chicken thighs and coat them well with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    While the chicken is marinating, wash and slice the bell peppers, zucchini, red onion, and halve the cherry tomatoes.

    Heat a large skillet over medium-high heat. Remove the chicken from the marinade (discard excess marinade) and place it in the skillet. Cook for about 6-7 minutes on each side or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).

    In the same skillet, add the sliced bell peppers, zucchini, red onion, and cherry tomatoes. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
