Method
Grape Preparation
- 1
Harvest and Sort Grapes
Harvest 5 kg of Sangiovese grapes and 3 kg of Cabernet Sauvignon grapes. Sort through the grapes to remove any leaves or damaged fruit.
- 2
Crush Grapes
Crush the sorted grapes to release their juice using a wine press or a traditional method.
Fermentation Process
- 3
Add Yeast
Once the grapes are crushed, add 10 g of yeast to the juice to initiate fermentation.
- 4
Monitor Fermentation
Allow the mixture to ferment for 1-2 weeks at a temperature of 20-25°C. Stir daily and monitor the sugar levels.
- 5
Add Tannin and Sugar
After a week of fermentation, add 5 g of tannin and 200 g of sugar to enhance flavor and stability.
- 6
Inoculate with Malolactic Bacteria
After primary fermentation is complete, add 5 g of malolactic bacteria to convert malic acid into lactic acid, softening the wine.
Aging Process
- 7
Transfer to Oak Barrels
Once fermentation is complete, transfer the wine into 2 oak barrels for aging. Seal the barrels properly.
- 8
Aging Period
Allow the wine to age in the barrels for at least 6-12 months, checking periodically for flavor development.
Bottling Process
- 9
Add Sulfites
Before bottling, add 50 mg of sulfites to the wine to prevent oxidation and preserve freshness.
- 10
Bottle the Wine
Using a siphon, carefully fill 12 wine bottles, leaving some space at the top for the cork.
- 11
Cork the Bottles
Seal each bottle with a cork and label them with the vintage year.
