Crust Preparation

Preheat the Oven
Preheat your oven to 325°F (160°C).

Mix the Crust Ingredients
In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined and the mixture resembles wet sand.

Form the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan, making sure it is evenly distributed. Use a flat-bottomed glass or measuring cup to press it down firmly.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while preparing the filling.

Prepare the Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Mix
Gradually add the granulated sugar to the cream cheese and continue to beat until well combined.

Incorporate Sour Cream and Vanilla
Add the sour cream and vanilla extract to the mixture, mixing until fully incorporated.

Add Eggs One at a Time
Add the eggs, one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Add Flour
Sift the all-purpose flour over the mixture and gently fold it in until just combined.

Pour Filling into Crust
Pour the cheesecake filling into the prepared crust, smoothing the top with a spatula.

Bake the Cheesecake
Bake in the oven at 325°F (160°C) for 60-70 minutes, or until the edges are set and the center is slightly jiggly.

Cool and Chill
Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Then, remove from the oven and let cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
