Method
Prepare the Pasta
Cook the Spaghetti
In a large pot of salted boiling water, add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
Reserve Pasta Water
Before draining the spaghetti, reserve about 1 cup of the pasta cooking water. This will help to adjust the sauce consistency later.
Prepare the Sauce
Mix Eggs and Cheese
In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add black pepper and mix again.
Season
Taste the mixture and add salt as needed.
Cook the Meat
Cook the Bacon
In a large skillet over medium heat, add the diced bacon or guanciale. Cook until the meat is crispy, about 5-7 minutes. Remove from heat.
Combine
Combine Pasta and Bacon
Add the drained spaghetti to the skillet with the bacon, and toss to combine. Ensure the pasta is coated in the bacon fat.
Adjust Consistency
If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
Serve
Plate and Garnish
Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
