Preparing the Mozzarella Sticks

Set up your dredging station
In three separate shallow bowls, place the flour in the first bowl, beat the eggs in the second bowl, and add the breadcrumbs mixed with garlic powder, dried oregano, salt, and black pepper in the third bowl.

Coat the cheese sticks
Take each mozzarella stick and coat it in flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess egg to drip off before finally rolling it in the breadcrumb mixture to coat thoroughly.

Freeze the cheese sticks
Place the coated mozzarella sticks on a baking sheet and freeze for at least 30 minutes. This helps the cheese to hold its shape while frying.

Fry the cheese sticks
Carefully add the frozen mozzarella sticks to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Make sure not to overcrowd the pan.

Drain and cool
Remove the fried mozzarella sticks and place them on a paper towel-lined plate to drain any excess oil. Let them cool for a few minutes before serving.

Cook the garlic
In a small saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Simmer the sauce
Allow the sauce to simmer on low heat for about 15-20 minutes, stirring occasionally. Adjust seasoning to taste.
