Preheat your oven to 450°F (230°C). Remove the leaves from the cauliflower and cut it into bite-sized florets.

Make the Batter
In a large bowl, mix the flour, water, garlic powder, onion powder, salt, and black pepper until smooth.

Coat the Cauliflower
Dip each cauliflower floret into the batter, allowing the excess to drip off, then roll it in the breadcrumbs to coat evenly.

Bake the Cauliflower
Place the coated florets on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until crispy and golden brown.

Melt the Butter
In a small saucepan over low heat, melt the unsalted butter.

In a bowl, whisk together the mayonnaise, buttermilk, dried dill, garlic powder, salt, and black pepper until smooth.

Toss Cauliflower in Sauce
Once the cauliflower bites are done baking, remove them from the oven and toss them in the buffalo sauce until well coated.
