Preparation

    Prep the Protein

    Cut the chicken thighs into bite-sized pieces. Slice the Andouille sausage into rounds.

    Chop the Vegetables

    Dice the onion, green bell pepper, and celery. Mince the garlic.

Cooking

    Sauté the Meat

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken and sausage, cooking until browned (about 5-7 minutes).

    Add Vegetables

    Stir in the diced onion, bell pepper, celery, and minced garlic. Cook until the vegetables are softened (about 5 minutes).

    Incorporate Spices

    Add the paprika, cayenne pepper, thyme, oregano, bay leaves, salt, and black pepper. Stir well to coat the meat and vegetables.

    Add Rice and Liquids

    Stir in the rice, diced tomatoes (with juice), and chicken broth. Bring the mixture to a boil.

    Simmer

    Once boiling, reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the rice is tender.

    Add Shrimp

    After 20 minutes, add the shrimp to the pot. Cover and cook for an additional 5 minutes, or until the shrimp are cooked through.

    Garnish and Serve

    Remove the bay leaves. Garnish with sliced green onions and chopped parsley before serving.
