Dough Preparation

Activate Yeast
In a small bowl, combine warm milk (about 110°F or 43°C) with granulated sugar and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, salt, and the activated yeast mixture.

Add Wet Ingredients
Add the eggs, melted unsalted butter, and vanilla extract to the flour mixture. Mix until a soft dough forms.

Knead Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the kneaded dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Prepare Oil
In a large, heavy-bottomed pot, heat vegetable oil to 350°F (175°C). Use a thermometer to maintain the temperature.

Shape Beignets
Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4 inch thick. Cut into squares (about 2 inches each).

Fry Beignets
Carefully drop a few squares into the hot oil. Fry until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Dust with Powdered Sugar
While still warm, dust each beignet generously with powdered sugar. Serve immediately.
