In a large heavy-bottomed pot, melt the butter over medium heat. Once melted, gradually whisk in the flour, stirring continuously to avoid lumps. Cook the roux for about 15-20 minutes, until it turns a light brown color, similar to that of peanut butter.

Add Vegetables
Add the diced onion, green bell pepper, and celery (the 'holy trinity' of Cajun cooking) to the roux. Stir well and cook for an additional 5-7 minutes until the vegetables are softened.

Incorporate Garlic and Spices
Stir in the minced garlic, cajun seasoning, paprika, salt, and black pepper. Cook for 2 minutes until the garlic is fragrant.

Add Broth and Crawfish
Gradually pour in the chicken broth while stirring to ensure there are no lumps. Bring the mixture to a simmer, then add the crawfish tails. Let it simmer for about 15-20 minutes to allow the flavors to meld.

Serve
In a bowl, serve a generous portion of cooked white rice topped with the crawfish etouffee. Garnish with chopped green onions.
