Cook the Meats
In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5 minutes. Add the chicken pieces and cook until browned on all sides, about 5 minutes more.

Add the Liquids
Pour in the chicken broth and add the diced tomatoes and sliced okra. Stir to combine.

Season the Gumbo
Add the bay leaves, Cajun seasoning, thyme, salt, and black pepper to the pot. Bring to a simmer.

Simmer the Gumbo
Reduce heat to low and let the gumbo simmer uncovered for 30-40 minutes, stirring occasionally.

Add the Shrimp
In the last 5 minutes of cooking, add the shrimp to the pot and stir until they are cooked through and pink.
Serving

Garnish and Serve
Remove bay leaves before serving. Ladle the gumbo into bowls, garnishing with sliced green onions and chopped parsley.
