Prepare the Rice
Rinse the organic brown long-grain rice under cold water until the water runs clear. Cook according to package instructions, typically in a pot with 4 cups of water. Bring to a boil, then simmer covered for about 45 minutes or until tender. Fluff with a fork and set aside.

Sauté the Kale
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped kale and sauté for about 5-7 minutes until wilted and tender. Season with salt and black pepper to taste. Remove from heat and set aside.

Prepare the Hempeh
Slice the Smiling Hara Hempeh into bite-sized pieces. In the same skillet, add the remaining tablespoon of olive oil and fry the hempeh pieces over medium heat until golden and crispy, about 3-5 minutes. Remove from heat.
