    Prepare the Tofu

    Preheat the oven to 375°F (190°C). Drain the tofu and press it to remove excess moisture. Cut into cubes and toss with peanut butter, soy sauce, minced garlic, salt, and black pepper. Spread on a baking sheet and bake for 25-30 minutes, flipping halfway through.

    Cook the Potatoes

    In a large pot, bring salted water to a boil. Add diced potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot. Mash with nutritional yeast, olive oil, and salt to taste.

    Sauté the Kale

    In a separate pan, heat olive oil over medium heat. Add chopped kale and sauté for about 5-7 minutes until wilted. Season with salt and pepper.

    Assemble the Dish

    On a plate, serve a generous portion of smashed potatoes topped with baked peanut butter tofu and sautéed kale on the side. Drizzle with vegetable broth for added moisture if desired.
