Prepare the Flax Egg
In a small bowl, mix ground flaxseed with water and let sit for 5 minutes until it thickens.

Mix the Veggie Burger Ingredients
In a large bowl, mash the black beans with a fork until mostly smooth. Stir in cooked quinoa, grated carrot, red bell pepper, onion, minced garlic, cumin, smoked paprika, salt, pepper, and the prepared flax egg. Mix until combined.

Form the Patties
Shape the mixture into 4 equal patties. If the mixture is too wet, add a little more quinoa or breadcrumbs.

Cook the Patties
Heat a non-stick skillet over medium heat and lightly oil it. Cook the patties for about 5-6 minutes on each side or until they are golden brown and heated through.

Assemble the Burger
Toast the whole wheat buns if desired. Place lettuce on the bottom bun, add the veggie patty, top with sliced red onion and tomato, and spread Vegenaise on the top bun. Serve immediately.
