Preparation Steps

  1. 1

    Prepare the Ginger Base

Peel and finely chop the fresh ginger root. In a saucepan, combine the chopped ginger, 4 cups of water, and 1 cup of granulated sugar. Bring to a boil, then reduce heat and let simmer for about 20 minutes to extract the flavor. Remove from heat and let it cool.

  2. 2

    Strain the Mixture

Once cooled, strain the ginger mixture through a fine mesh sieve or cheesecloth into a large bowl or jug, discarding the solid pieces. You should have a ginger-infused syrup.

  3. 3

    Add Lemon Juice and Yeast

Stir in 1 cup of lemon juice and 1 teaspoon of active dry yeast into the ginger syrup. Mix well until the yeast is fully dissolved.

  4. 4

    Fermentation

Cover the bowl or jug with a clean cloth or plastic wrap and let it sit at room temperature for 24-48 hours. Check periodically for carbonation. Once bubbles are visible and the mixture is fizzy, it’s ready for bottling.

  5. 5

    Bottling

Using a funnel, pour the ginger beer mixture into clean bottles, leaving some space at the top. Add 2 cups of bottled ginger beer to each bottle for additional carbonation. Seal the bottles tightly.

  6. 6

    Refrigerate and Enjoy

Refrigerate the bottles for at least 24 hours before serving. Serve chilled and enjoy your homemade Reed’s “Xtra” Ginger Beer!
