Portobello Plate Recipe

An entire portobello mushroom cap marinated and grilled, served with sautéed kale, and your choice of either smashed potatoes or organic rice. Topped with gravy and grilled red onions.

    Marinate the Portobello Mushrooms

    In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, and minced garlic. Add the portobello mushrooms and coat them well in the marinade. Let them marinate for at least 30 minutes.

    Prepare the Kale

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped kale and sauté until wilted, about 5-7 minutes. Season with salt and pepper to taste. Remove from heat and set aside.

    Grill the Mushrooms

    Preheat the grill or grill pan over medium-high heat. Grill the marinated portobello mushrooms for about 5-7 minutes per side, or until tender and grill marks appear.

    Sauté the Red Onions

    In the same skillet used for the kale, add a little more olive oil if needed and sauté the sliced red onions until soft and caramelized, about 5 minutes.

    Prepare the Smashed Potatoes or Rice

    If using smashed potatoes, boil potatoes until tender, then mash with butter, salt, and pepper. If using rice, cook according to package instructions.

    Assemble the Plate

    On a plate, layer the smashed potatoes or rice, top with sautéed kale, place the grilled portobello mushroom on top, drizzle with gravy, and finish with sautéed red onions.
