Prepare the Pinto Beans
If using dried pinto beans, soak them overnight in water. Drain and rinse before cooking. In a pot, combine soaked beans with 4 cups of water. Bring to a boil, then reduce heat and simmer until tender, about 1.5 to 2 hours. If using canned pinto beans, simply rinse and set aside.

Cook the Rice
In a separate pot, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cumin; sauté for another minute. Stir in 1 cup of brown rice and toast for a couple of minutes. Add 2 cups of water, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and cook for 45 minutes or until rice is tender and water is absorbed.

Combine and Serve
Once the rice and beans are cooked, fluff the rice with a fork. Serve the rice on a plate topped with pinto beans. Add tortilla chips or a side of sweet southern-style slaw for a complete meal.
