    Prepare the Beans

    Rinse the organic pinto beans under cold water to remove any dirt or impurities. Soak the beans in water for at least 6-8 hours or overnight for best results.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Beans

    Drain the soaked beans and add them to the pot with the sautéed onions and garlic. Pour in 4 cups of fresh water and add sea salt. Bring the mixture to a boil, then reduce the heat to low and cover the pot.

    Simmer

    Let the beans simmer for about 1 to 1.5 hours, or until they are tender. Stir occasionally and add more water if necessary to keep the beans submerged.

    Serve

    Once the beans are cooked to your desired tenderness, remove them from heat. Taste and adjust seasoning if needed. Serve warm as a side dish or incorporate into your favorite recipes.
