Preparation

  1. 1

    Preheat the Skillet

Place a 10-inch cast iron skillet in the oven and preheat to 450°F (232°C).

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

  3. 3

    Combine Wet Ingredients

In another bowl, beat together the milk, eggs, and melted butter until well combined.

  4. 4

    Combine Mixtures

Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.

  5. 5

    Prepare Skillet

Carefully remove the hot skillet from the oven and add a tablespoon of butter, swirling to coat the bottom.

  6. 6

    Bake

Pour the batter into the hot skillet and return to the oven. Bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.

  7. 7

    Cool and Serve

Allow the cornbread to cool in the skillet for 10 minutes before slicing and serving.
