    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Fries

    Place the cut potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with a clean kitchen towel to remove as much moisture as possible.

    Heat the Oil

    In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add a handful of the dried potato strips into the hot oil. Fry in batches to avoid overcrowding. Cook for 4-5 minutes or until golden brown.

    Drain and Season

    Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt to taste.

    Serve

    Serve the French fries immediately, while hot and crispy.
