Prepare the Tofu
Preheat the oven to 375°F (190°C). Press the tofu to remove excess moisture, then cut it into cubes. In a bowl, mix the peanut butter, soy sauce, salt, and black pepper. Toss the tofu cubes in the mixture until well coated. Place on a baking sheet and bake for 25-30 minutes, turning halfway through.

Sauté the Kale
While the tofu is baking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the kale and sauté for 5-7 minutes until wilted. Pour in the vegetable broth and cook for an additional 2-3 minutes. Season with salt and pepper to taste.

Serve
On each plate, arrange a portion of smashed potatoes, sautéed kale, and top with peanut butter-baked tofu. Pour Granny's gravy over the potatoes and serve immediately.
