Buchi Energy Preparation

1. Step 1: Prepare Sweet Tea

Boil 4 cups of filtered water in a pot. Once the water reaches a rolling boil, remove it from heat and add 1 cup of sugar. Stir until completely dissolved. Add 4 cups of black tea and let it steep for about 15 minutes.

2. Step 2: Cool the Tea

After steeping, remove the tea bags or strain the loose tea leaves. Allow the sweet tea to cool to room temperature.

3. Step 3: Combine Ingredients

In a clean glass jar or fermentation vessel, pour the cooled sweet tea. Add 1 cup of starter tea and gently place the SCOBY on top.

4. Step 4: Fermentation

Cover the jar with a clean cloth or coffee filter secured with a rubber band. Allow it to ferment in a warm, dark place for 7 to 14 days, tasting periodically until it reaches your desired level of fermentation.

5. Step 5: Flavoring and Bottling

Once fermented, remove the SCOBY and set it aside. If desired, add your chosen flavorings to the liquid, then pour the Buchi into bottles, leaving some space at the top.

6. Step 6: Second Fermentation

Seal the bottles and let them sit at room temperature for an additional 3 to 7 days for carbonation. Refrigerate after achieving desired fizziness.
