Cook the Beans
If using dried pinto beans, soak them overnight in water. Drain and rinse. In a pot, add beans, 3 cups of water, and 1 tsp of salt. Bring to a boil, then reduce heat and simmer for about 1-1.5 hours until tender. If using canned beans, simply drain and rinse.

Cook the Rice
In a separate pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant. Add 1 cup of rinsed brown rice and stir for a minute. Add 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes until rice is tender.

Combine and Serve
Once the rice and beans are cooked, fluff the rice with a fork and mix in the cooked pinto beans. Serve on a plate with your choice of tortilla chips or sweet southern-style slaw on the side.
