Cook the Pasta

Bring a large pot of salted water to a boil. Add the radiatore pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the pasta.

Prepare the Sauce

In a large skillet over medium heat, add the olive oil and freshly cracked black pepper. Toast the pepper for about 1 minute until fragrant.

Combine Pasta and Sauce

Add the drained pasta to the skillet with the pepper. Toss to combine, then gradually add the reserved pasta water, a little at a time, stirring continuously until a creamy sauce forms.

Add Cheese

Remove the skillet from heat and add the grated Pecorino Romano cheese. Toss quickly to combine, adding more reserved pasta water if necessary to reach desired creaminess.

Serve

Serve immediately, topped with extra Pecorino and additional cracked black pepper if desired.
