Prepare Acid Adjusted Watermelon Juice
Cut a ripe watermelon into chunks and blend until smooth. Strain the juice through a fine mesh sieve or cheesecloth into a bowl. To adjust acidity, add a small amount of lemon juice to taste. Set aside.
Mixing the Drink

Combine Ingredients
In a cocktail shaker, add the Cimmaron Tequila, Smith & Cross Rum, Henri Bardouin Pastis, and the acid adjusted watermelon juice. Fill the shaker with ice.

Shake
Shake the mixture vigorously for about 15 seconds until well chilled.

Strain and Serve
Strain the mixture into a highball glass filled with ice.

Garnish the drink with a slice of watermelon and a few mint leaves on top.
