Tofu Preparation

Marinating the Tofu
Press the firm tofu to remove excess moisture. Cut it into cubes and place in a bowl.

Combine
Pour the marinade over the tofu cubes, ensuring they are fully coated. Cover and let marinate for at least 30 minutes.
Jasmine Rice Cooking

Rinse Rice
Rinse 1 cup of jasmine rice under cold water until the water runs clear.

Cook Rice
In a pot, combine the rinsed jasmine rice with 1.5 cups of water. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes.

Fluff and Rest
After 15 minutes, remove from heat and let it sit covered for an additional 10 minutes. Fluff with a fork before serving.
Panang Curry Sauce Preparation

Cook Curry Paste
In a saucepan over medium heat, add 2 tablespoons of Panang curry paste and cook for 1-2 minutes until fragrant.

Add Liquids
Pour in 1 cup of coconut milk and 1 cup of vegetable broth. Stir to combine and bring to a simmer.

Simmer Sauce
Let the sauce simmer for about 10 minutes, stirring occasionally, until it thickens slightly.

Sauté Vegetables
In a large skillet, heat a tablespoon of oil over medium-high heat. Add the chopped vegetables and sauté for about 5-7 minutes until crisp-tender.
Assembly and Serving

Cook Marinated Tofu
In the same skillet, add marinated tofu cubes and cook until golden brown on all sides, about 5-7 minutes.

Combine Tofu and Sauce
Pour the Panang curry sauce over the cooked tofu and vegetables. Stir to combine and heat through for an additional 2-3 minutes.

Serve the curry over jasmine rice, sprinkle with wild rice furikake, and enjoy!
