Prepare the Saffron Infusion
In a small bowl, add the saffron threads and pour 2 tablespoons of hot water over them. Let it steep for about 10 minutes to allow the saffron to release its flavor and color.

Brew the Jasmine Tea
In a small saucepan, bring 2 cups of water to a boil. Once boiling, remove from heat and add the jasmine tea leaves. Let it steep for 5 minutes to extract the flavor.

Combine Ingredients
After the jasmine tea has steeped, strain the tea into a pitcher, discarding the leaves. Add the saffron infusion (including the saffron threads), fresh lemon juice, and honey (if using) to the pitcher. Stir well to combine.

Chill and Serve
Let the tonic cool to room temperature, then refrigerate until chilled. To serve, fill glasses with ice cubes, pour the saffron jasmine lemon tonic over the ice, and garnish with lemon slices and mint leaves.
