Preparing the Mussels

Clean the Mussels
Rinse the mussels under cold running water to remove any dirt or sand. Remove any beards (the fibrous strands) by pulling them out firmly.

Check for Freshness
Discard any mussels that are open and do not close when tapped, as they are no longer fresh.
Making the Curry Sauce

Combine Ingredients
In a medium saucepan, combine the coconut milk, Panang curry paste, fish sauce, brown sugar, and lime juice.

Heat the Sauce
Place the saucepan over medium heat and whisk the ingredients together until well combined and warmed through, about 3-5 minutes. Do not let it boil.
Steaming the Mussels

Prepare for Steaming
In a large pot with a lid, add the cleaned mussels. Pour the prepared curry sauce over the mussels.

Steam the Mussels
Cover the pot and place it over medium-high heat. Steam the mussels for about 5-7 minutes or until they have fully opened. Discard any mussels that remain closed.
Serving

Plate the Dish
Using a slotted spoon, transfer the steamed mussels to a serving platter, drizzling the curry sauce over them.

Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the mussels.
